We have an unexpected party to attend tonight, so I needed something quicker than the farmer's pie I had on the menu plan.

This was very rich. Probably too rich to be a main dish rather than a side, but you don't hear me complaining, do you?





First, I sauteed some garlic in butter. How can that be bad? Then I added some halved romanita tomatoes (excellent flavor, and on sale for seventy-nine cents a pound today), a little olive oil, and some dried basil.




Mixed all this stuff with a bunch of goat cheese (a little peppered, but mostly the plain stuff).





And then it all goes in the bowl:




It felt like a foofy version of mac-and-cheese, and I'm going to play with this some more in the future, because I have good, cheap source of goat cheese, and I don't get sick from it (no lactose). Next time, less sauce, more pasta, and something light to go with it, like a big pile of steamed broccoli or something.

I am so glad we walked three miles today. I'm stuffed.

Looks like I used about twice as much cheese as you. Definitely less next time, but oh, man, it was good.

We get cheap, tasty goat cheese at the Grocery Outlet. About $3.50 for 8 ounces.

Not OT at all. Yeah, it's what I call shepherd's pie that has no meat in it. Basically, I toss chickpea gravy with a variety of veggies, cover it with mashed potatoes, and bake. We love it.
