The muffin trials have begun.

[livejournal.com profile] porcinea's banana muffins are indeed fool-proof, and I should know, because I'm the fool who forgot the butter, scooped the batter out of the tins, stirred the butter in as well as she could, and then baked huge muffins, two of which went down the teenager's gullet to cries of "Oh Em Gee these are so awesome!"

[livejournal.com profile] tiger_spot's Morning Glorious muffins are in the oven, minus the cinnamon, and with dried cherries in place of raisins. I'll let you know, but ooh, they smell good.

Next, a batch of thrown-together muffins using up some of what I've got handy, like dried cherries and a fresh mango that needs to go. Maybe coconut and pineapple? I know -- tropical fruit-salad muffins! Yes, that's just the ticket.

Convalescence food #1:

Homemade veggie stock, heated with a tablespoon of miso paste. Yummmm, miso broth.

Convalescence food #2:

Canned low-sodium chicken stock, cooked with a handful of rice until the rice was very soft. Yummy, but too filling on a convalescing stomach.

Convalescence food #3:

Pastina cooked in veggie stock with a pat of butter and some salt and pepper. Not bad, but not my mother's pastina, which is cooked in chicken fat with onions.

Convalescence food #4:

Savory Bread Pudding

Cube up enough non-sweet bread (I used onion-poppyseed that had gone stale) to fill a 9-inch-square baking pan

Over the top of that, pour a mixture of 4 beaten eggs, 2 cups of milk, some salt and pepper, and, optionally, some poultry seasoning or, if you want a stuffing vibe to it, something with some sage in it, like Costco's organic no-salt seasoning

Turn on the oven to 350F. Using the back of a wooden spoon (or, if you're lazy, as I am, the whisk you just beat the eggs with), push all the bread down into the liquid until it's all smooshed in there, and let it sit until the oven's preheated. Optionally (yeah, like butter's an option here), put a few pats of butter on the top. Bake for 40-45 minutes, until the top is puffy and starts to brown.

I keep experimenting with whole-grain rye bread -- [livejournal.com profile] someotherguy is diabetic, and rye has a better glycemic index than wheat -- besides, he likes rye bread. Anyway, I like this one. It's really substantial, but not dry or overly dense. The dough looks dubious straight out of the bread machine (I usually bake in the oven), but it bakes up well.

Whole-wheat-and-rye bread (ABM)

1 1/4 cups water
2 1/2 cups whole-wheat flour (I grind my own; you may need a little more liquid if you use store-bought)
1 cup whole-rye flour (see above)
1/4 cup gluten
2 Tbsp. sugar
1 1/2 tsp. salt
2 Tbsp. caraway seeds
1 1/2 tsp. yeast

Put ingredients in the breadmaker in the order the manufacturer says. Either do it on dough cycle, let rise a second time in a loaf pan, and then bake 35-40 minutes in a preheated 350F oven, or bake all the way on a whole-grain cycle.

[livejournal.com profile] someotherguy was in the mood for chocolate-chip cookies, so we walked to the store to get the 'gredients. They didn't have chocolate chips, so we got some 72% dark chocolate and some other stuff -- eggs, butter. So we went home and I proceeded to prepare the cookies...

...and dropped the bowl of chopped chocolate onto the floor. *sob*

So, when life gives you spilled chocolate, you make lemonade, right? Or something.

Added some good cocoa powder to the cookie dough, then instead of chocolate chunks, stirred in a little less than half the volume of coffee beans. Yum. Crunchy, but yum. I wouldn't feed these to any but the most coffee-addicted of my friends and family, but they're pretty damn good for improvised cookies.

Making a batch of whole-wheat/honey/sunflower-seed bread (recipe below), on which we're having grilled cheese sandwiches. About to fix a big pot of homemade vegetable soup to go with it. And I found artichokes six for $1.89, so I'll probably cook those up, too. Yumma.

Whole-wheat Bread with Honey and Sunflower Seeds (bread machine)

1 1/4 cups water or milk
2-4 tablespoons honey, to taste
3 cups whole-wheat flour (I use freshly ground; if you use store-bought, you might need a little more liquid)
1/2 cup bread flour
3 tablespoons vital wheat gluten
1 heaping teaspoon salt
2 teaspoons yeast
1/4 cup sunflower seeds

Place everything except sunflower seeds into bread machine in the order the manufacturer recommends, and start dough cycle. When it's time to add things (my machine beeps 8 times), add the sunflower seeds. When the dough is ready, shape it and place it in a buttered loaf pan. Cover pan with oiled plastic wrap and let rise until just cresting the top of the pan. At that point, preheat oven to 350F. Bake 35 minutes. Turn out of pan and cool on a rack for at least 15 minutes before slicing.

Whole-wheat dinner rolls (bread machine)

Yield: 12 rolls

1 1/4 cups water
2 1/2 cups whole-wheat flour
1 cup bread flour
2 1/2 tablespoons vital wheat gluten
2 tablespoons sugar
1 heaping teaspoon salt
1 1/2 teaspoons active dry yeast

Put ingredients in your bread machine in the order suggested. Run machine on "dough" setting. Shape finished dough into 12 balls. Place almost touching in a baking dish (I use a glass, 9"x13" dish) that's been either lightly greased or lined with parchment. Cover with plastic wrap or a towel and let rise until double in size, about 30-40 minutes. Bake at 375 for about 15 minutes, or until they look golden brown and sound hollow when you tap their little bottoms. :-)

[livejournal.com profile] someotherguy and I were curious about how the New York Times bread would turn out if I used a loaf pan covered with foil instead of the pot method. It's still good stuff, though it looks a little odd.

It's no secret how much I love my NYT bread. Today, though, I bothered dragging out the camera. Yum. Bread.

Another batch of Struan is rising (triple-loaf batch, but this time I may make 2 bigger loaves from it). Struan isn't vegan, so I also have some onion bread in the dough cycle of the bread machine, and I'm going to make rolls out of that (both for [livejournal.com profile] someotherguy's hot dogs and my own uses). I am so happy that I can make bread now. I think I'll go toss some NYT dough in to rise, too, so we can have bread at Craft Night tomorrow.

Just as a fun experiment, took the NYT bread dough (I seem to be making it every other day or so) and cut it into roll-sized pieces and baked 'em. Fun rolls, like a cross between a bun and a sourdough english muffin. We had TVP sloppy joes on them tonight, along with coleslaw. Yummy.

My first attempt at injera was a yucky flop. It went down the drain. My second attempt is on the kitchen counter at the moment. Wish me luck.

I looked up some versions of anadama bread, found a vegan version on fatfree.com, and adapted it to what I had on hand. So far, it's the best bread I've made in my new bread machine. It didn't *look* like bread dough, it didn't *rise* like bread dough, but the loaf that resulted was gorgeous and tasty, and [livejournal.com profile] stonebender and I ate most of a loaf yesterday. I made more for tonight's party, along with an Ethiopian stew. They both went over really well.

Here's how I did it:

Place wet ingredients in breadmaker (or do it in the order your bread
machine says to):

1 1/2 cups water
1/3 cup molasses

Add dry ingredients:

1 2/3 cups all-purpose flour
1 Tablespoon gluten
1 1/2 cups white whole-wheat flour
1/3 cup yellow cornmeal
1 1/2 teaspoons salt

Put 2 1/4 tsp. yeast into a depression in the top of the dry
ingredients. Run machine on basic setting.
