Pot pie!

Pot pie is one of my wintry-comfort-food things, but I rarely eat it because (a) I don't buy many prepared foods; (b) the vegan prepared ones are *expensive*; and (c) I rarely get around to cooking that involves so many steps. Still, I wanted pot pie today, and [livejournal.com profile] someotherguy was enthusiastic about the idea, so that's what I'm making.

1) I made pie crust from a Vegan Vittles recipe

2) I cooked garbanzos so I can make some Punk Rock Chickpea Gravy from Vegan with a Vengeance

3) I bought fresh peas, which I need to shell (it's not pot pie without peas, as I'm sure you'll agree).

4) Next, I will make the gravy, cook onions and potatoes [edit: and carrots], add peas and gravy, and top with pie crust. Pics if I think of it.

Yum, pie!

Oo! I assume that the punk rock gravy takes care of the protein component. I've put both seitan and tofu in vegan pot pies and they taste fine but they tend to get a bit soggy.

Yeah, I sometimes use fried tofu, or seitan, but the chickpeas should do the protein trick, along with the whole-wheat flour and potatoes, both of which have a fair amount of protein. (To be honest, I don't really need the protein boost, but if I don't put it in there, [livejournal.com profile] someotherguy has to go looking for another protein source.)

I love making veggie pot pie. My version's not vegan, though. I usually layer the bottom and the top-just-under-the-pie-shell with a mixture of spinach and shredded cheese.
